- 1 cup blueberries
- 2 tablespoons balsamic vinegar
- 3 tablespoons brown sugar
- 4 slices bread
- 1 cup baby spinach (optional)
- 2 slices havarti
- Heat blueberries, vinegar, and brown sugar in a saucepan over medium heat, bring to a boil for 5 minutes.
- Strain and set aside.
- Layer half of havarti and spinach leaves onto one slice of wheat bread.
- Spread blueberry mixture over spinach.
- Top with remaining havarti.
- Place another bread slice over cheese.
- Heat a skillet over medium heat and cook sandwich on each side for 2-3 minutes, or until cheese is melty.
- It's good!
