Slow Cooker Chocolate Lava Cake

Ingredients

For the cake layer:

  • 15.25 oz. Chocolate Fudge Cake Mix
  • 3 eggs
  • 1/2 cup oil
  • 1 1/4 cup freshly brewed coffee, let cool down a bit, water can be used here instead if desired 
For the pudding layer: 

  • 3.9 oz. instant chocolate pudding mix
  • 2 cups milk
For the third layer:

  • 12 oz. bag semi-sweet chocolate chips

Directions

  1. Spray the slow cooker with non-stick spray.
  2. In a medium-sized bowl, add the eggs, oil and the cake mix.
  3. Start blending with a whisk for a few seconds before adding the coffee.
  4. Slowly add the coffee and finish blending. Do not over blend, some lumps are fine.
  5. In another bowl mix the pudding mix and milk until combined. Let thicken for a few minutes.
  6. Pour the cake batter into the slow cooker. Then add the pudding layer by dropping dollops over the cake mix. Sprinkle the chocolate chips over the top.
  7. Cover and cook on HIGH for 3 hours without opening the lid during the cooking time.

Chocolate Ganache Cake

Ingredients

  • 1/4 pound unsalted butter at room temperature
  • 1 cup sugar
  • 4 extra-large eggs at room temperature
  • 1 (16-ounce) can chocolate syrup
  • 1 tablespoon pure vanilla extract
  • 1 cup all-purpose flour

For the ganache:
  • 1/2 cup heavy cream
    8 ounces good semisweet chocolate chips
    1 teaspoon instant coffee granules

Directions
  1. Preheat the oven to 325 degrees.
  2. Butter and flour an 8-inch round cake pan, then line the bottom with parchment paper. 
  3. Cream the butter and sugar in the bowl of an electric mixer fitted with the paddle attachment until light and fluffy.
  4. Add the eggs, one at a time.
  5. Mix in the chocolate syrup and vanilla.
  6. Add the flour and mix until just combined. Don't overbeat, or the cake will be tough.
  7. Pour the batter into the pan and bake for 40 to 45 minutes, or until just set in the middle. Don't overbake! Let cool thoroughly in the pan.
  8. For the ganache, cook the heavy cream, chocolate chips, and instant coffee in the top of a double boiler over simmering water until smooth and warm, stirring occasionally. 
  9. Place the cake upside down on a wire rack and pour the glaze evenly over the top, making sure to cover the entire cake and sides. You can tilt the rack to smooth the glaze.
  10. Decorate with candied violets, if desired, or gently crumble the gold leaf and place it on the center of the cake. Do not refrigerate.

Notes
Cook's Note -- Ina decorated the cake with a chevron pattern in this episode. For the icing, she mixed 1 3/4 cups confectioners' sugar with 3 tablespoons water in a small bowl and placed the mixture in a pastry bag. Using a small round pastry tip, she piped 6 equally spaced straight lines of icing across the top of the cake. Using the back side of a small knife, she lightly drew 7 evenly spaced straight lines in the ganache perpendicular to the lines of icing, alternating the direction for each line.

Busy-Day Chocolate Cake

Ingredients
  • 1 1/2 cups all-purpose flour, (spooned and leveled)
  • 1 cup sugar
  • 3 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon coarse salt
  • 6 tablespoons vegetable oil
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon white vinegar
  • 1 cup cold water
Directions
  1. Preheat oven to 350 degrees.
  2. In an 8-inch square baking pan, whisk together all-purpose flour, sugar, unsweetened cocoa powder, baking soda, and coarse salt.
  3. Make a well in center of flour mixture and add vegetable oil, pure vanilla extract, white vinegar, and cold water.
  4. Whisk until well combined.
  5. Bake until a toothpick inserted in center comes out clean, 35 to 40 minutes.
  6. Let cool completely in pan on a wire rack.
Notes
Top with Simple Buttercream frosting.

Slow Cooker Chocolate Pudding/Lava Cake

Ingredients
  • 1 chocolate box cake
  • 1/2 cup vegetable oil
  • 1 1/4 c milk
  • 3 eggs
  • 1 package of pudding
  • 2 cups milk
  • 1/2 cup semi sweet chocolate chips
Directions
  1. Mix chocolate box cake and pour into slow cooker.
  2. Then mix box pudding and layer on top of cake mix. 
  3. Sprinkle chocolate chips on top as you like.
  4. Cook on high for 2 1/2 hours.
  5. Enjoy on it’s own or with vanilla ice cream.
Notes
Optional: vanilla ice cream
