Yum Yum Sauce

Ingredients
  • 1 cup mayo (Duke's)
  • 1/4 cup ketchup
  • 2 teaspoons rice vinegar
  • 2 teaspoons granulated white sugar
  • 1/2 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp ground ginger
  • 1/4 tsp onion powder
  • 1-2 tablespoons water
Directions
  1. In a mixing bowl, combine all the ingredients except water. Stir to combine. Taste and if needed add more hot sauce or salt and pepper—whatever you think it needs.
  2. Then thin to your desired consistency with water.
  3. Store in a container with a lid in a refrigerator when not using.

Strawberry Salsa


Ingredients
  • 1 quart strawberries, diced
  • 1 medium red onion, very finely diced
  • 1 red bell pepper, seeded and very finely diced
  • 1 jalapeno, seeded and minced (include some seeds for spice)
  • 1/2 bunch fresh cilantro, chopped

Directions

  1. Put the strawberries in a bowl along with the onions, bell peppers, jalapenos and most of the cilantro, reserving some for garnish.
  2. Add some salt and the juice of 1 of the limes.
  3. Mix it all together, cover and refrigerate

Classic Hummus

Ingredients

  • 3 cans (14.5 Oz.) Garbanzo Beans, Rinsed And Drained
  • 1/3 cup Plus 1 Tablespoon Tahini
  • 3 cloves Garlic, Chopped, Or More To Taste
  • 1/2 whole Lemon, Juiced
  • 1/2 teaspoon Ground Cumin, Or More To Taste
  • Salt To Taste
  • Fresh Basil Or Italian Parsley
  • 3 Tablespoons To 5 Tablespoons Cold Water
  • 1 Tablespoon Olive Oil

Directions

  1. Combine chickpeas with all ingredients, except water and olive oil, in a blender or food processor. 
  2. Pulse until mixture becomes somewhat smooth and combined, but do not over mix. 
  3. Add water as necessary to facilitate blending. At the end, add olive oil and pulse no more than three times, just to incorporate.
  4. Pour mixture into a bowl and stir to ensure mixture is combined. Serve immediately or refrigerate for up to three days in the fridge.

Frank's RedHot Buffalo Chicken Dip

Ingredients
  • 1 (8 oz. pkg.) Cream Cheese, softened
  • 1/2 cup FRANK'S® RedHot® Original Cayenne Pepper Sauce 
  • 1/2 cup ranch dressing 
  • 2 cups shredded cooked chicken (2 chicken breast, poached)
  • 1/2 cup shredded cheese 
Instructions
  1. Preheat oven to 350°F.
  2. COMBINE all ingredients in a 1-quart baking dish.
  3. BAKE 20 min. or until mixture is heated through; stir. 
  4. Garnish as desired. Serve with crackers and/or vegetables.
Notes
- make dip 1-2 days ahead then top with shredded cheese and bake before serving
- Makes: 4 cups dip
- Prep Time: 5 min
- Cook Time: 20 min
