Slow Cooker Hawaiian Meatballs

Ingredients
  • 1 (24 ounce) pkg. precooked frozen meatballs
  • 1 (20 ounce) can pineapple chunks (drain and reserve juice)
  • 3 bell peppers (large diced)
  • 1 cup brown sugar
  • 3 Tablespoons cornstarch
  • 2/3 cup apple cider vinegar
  • 2 Tablespoons soy sauce
Directions
  1. Spray a slow cooker with nonstick cooking spray.
  2. Place frozen meatballs in the slow cooker and top with drained pineapple (reserve the juice and set aside), and bell pepper chunks.
  3. In a mixing bowl, whisk together pineapple juice, brown sugar, cornstarch, vinegar and soy sauce.
  4. Pour sauce in slow cooker and mix everything to combine.
  5. Cover and cook on low for 3-4 hours or until heated through.
  6. Serve over cooked rice.
Notes
- We like to eat these Hawaiian meatballs over rice for dinner, but you could easily serve them plain as an appetizer.

Slow Cooker Hawaiian BBQ Pulled Pork

Ingredients
  • 1 (1.5 lb) pork shoulder or butt roast
  • ½ cup brown sugar, plus 2 tablespoons for rub
  • 1 (15 oz) can pineapple rings, juice reserved
  • 2 teaspoons Worcestershire sauce or liquid smoke
  • 1 cup BBQ sauce
  • King’s Hawaiian Sweet Buns for serving
Instructions
  1. Spray slow cooker with non-stick cooking spray. 
  2. Take 2 tablespoons of brown sugar and rub on all sides of the roast; set roast in slow cooker.
  3. In a medium bowl, mix together brown sugar, juice from the can of pineapple rings, Worcestershire sauce (or liquid smoke), and BBQ sauce. 
  4. Pour of roast in slow cooker. 
  5. Cook on low for 8-10 hours or high for 5-6 hours.
  6. Using two forks, shred roast in the slow cooker (it should literally fall apart). Let rest in the sauce for at least 30 min with the lid on. 
  7. Scoop shredded pork onto individual rolls, top with a pineapple ring, and serve.

Crock Pot Hawaiian BBQ Chicken

Ingredients

  • 4-6 Boneless Chicken Breasts (mine were still frozen!)
  • 1 Bottle Archer Farms Hawaiian Style Barbecue Sauce (from Target)
  • 1 20 oz. can Pineapple Chunks, drained

Instructions
  1. Spray the inside of your crock pot with cooking spray for an easy cleanup! 
  2. Place frozen chicken breasts in the crock pot and cover with sauce. 
  3. Empty can of drained pineapple chunks on top.  
  4. Cook on High for 2-3 hours or Low for 4-6 hours.  
  5. Shred chicken with two forks while still in the crock pot so the chicken will be well coated with sauce.
  6. Serve over rice.
