Sausage Pasta

Ingredients
  • 1 package pasta (rigatoni / rotini / ziti / penne -- Whatever you fancy!)
  • Olive Oil
  • 1 small yellow onion, minced (use the manual food processor to make it easy)
  • 1 package regular (not spicy) Neese's Country Sausage
  • 6 oz. tomato paste
  • 2 - 3 cloves garlic, minced
  • 1 cup beef stock
  • 1 cup Light Cream (Heavy cream is also acceptable and delicious)
  • Salt & Pepper to taste

Directions

  1. Cook pasta, drain, then add drizzle of olive oil, set aside
  2. Heat oil in pan. Add chopped onion. Cook over low heat until onion is soft
  3. Add sausage meat and fry until done. Drain fat (optional)
  4. Add garlic, tomato paste, and 1 cup of beef stock. salt and pepper
  5. Simmer over low heat for 10-ish minutes
  6. Add cream & stir
  7. Combine pasta with sauce
  8. Top with freshly grated parmesan cheese (optional but strongly encouraged)

Notes

  • Jimmy Dean Regular sausage can be used
  • 1/2 is fine!
  • Alt to beef stock: ‘Better Than Bouillon’ paste and 1 cup water

Stuffed Zucchini Boats

Ingredients
  • 2 medium zucchini, washed
  • 1 pound ground turkey
  • 1/4 tsp baking soda
  • 1 Tablespoon water
  • 1 yellow onion finely diced
  • Spice blend of choice (Mexican, Italian, etc.)
  • 2 Tablespoons tomato paste
  • 3/4 cup shredded cheese of choice
  • Cooking spray
Directions
  1. Preheat oven to 400°F
  2. Prep ground meat with baking soda + water 
  3. Sauté onion until soft
  4. Add spice blend, stir and sauté for 1-2 min
  5. Add tomato paste
  6. Add ground meat, cook until no pink remains
  7. Remove the pan from the heat and stir in 1/2 of the cheese
  8. Slice zucchini lengthwise and scoop out the center to create a shell and place into a greased baking dish.
  9. Fill each zucchini with 1/4 of the beef mixture and top with remaining cheese
  10. Cover baking dish with aluminum foil
  11. Bake for 25 minutes or until zucchini is soft and cheese is bubbly

Best Taco Meat

Ingredients
  • 1 tablespoon water 
  • ¼ teaspoon baking soda 
  • 12 ounces 90 percent lean ground beef (or ground turkey/chicken)
  • 1 tablespoons vegetable oil
  • 1 onion, chopped fine
  • 1 ½ tablespoons chili powder
  • 1 ½ tablespoons paprika
  • 1 ½ teaspoons ground cumin
  • 1 ½ teaspoons garlic powder
  • 1 teaspoon salt
  • 2 tablespoons tomato paste
  • 2 ounces cheddar cheese, shredded (1/2 cup)
Directions
  1. Combine water and baking soda in large bowl.
  2. Add ground meat and mix until thoroughly combined. Set aside.
  3. Heat 1 tablespoon oil in 12-inch nonstick skillet over medium heat until shimmering. Add onion and cook, stirring occasionally, until softened, 4 to 6 minutes.
  4. Add chili powder, paprika, cumin, garlic powder, and 1 teaspoon salt and cook, stirring frequently, until fragrant, about 1 minute.
  5. Stir in tomato paste and cook until paste is rust-colored, 1 to 2 minutes.
  6. Add ground meat mixture and cook, using wooden spoon to break meat into pieces until beef is no longer pink, 5 to 7 minutes.
  7. Turn off heat, stir in cheddar until cheese has melted and mixture is homogeneous.

Drunken Pumpkin Chili

Ingredients
  • 1.5 lbs ground beef
  • 1 med yellow onion
  • 1 yellow bell pepper
  • 15.5 oz black beans, drained and rinsed
  • 15.5 oz kidney beans, drained 
  • 15.5 oz diced tomatoes, drained 
  • 8 oz pumpkin puree 
  • 1/2 cup beef broth
  • 1/2 cup pumpkin beer
  • 1 tbs minced garlic 
  • 4 oz tomato paste
  • 1 tbs allspice
  • 1tbs chili powder 
  • 1/2 tsp cinnamon
  • salt & pepper 

Instructions
  1. Brown ground beef with salt, pepper, garlic, onion, and bell pepper until meat is no longer pink
  2. drain fat and return to heat
  3. add all remaining ingredients
  4. bring to boil then cook on low for 4-5 hours

Serves 4-6
