- 2 medium zucchini, washed
- 1 pound ground turkey
- 1/4 tsp baking soda
- 1 Tablespoon water
- 1 yellow onion finely diced
- Spice blend of choice (Mexican, Italian, etc.)
- 2 Tablespoons tomato paste
- 3/4 cup shredded cheese of choice
- Cooking spray
- Preheat oven to 400°F
- Prep ground meat with baking soda + water
- Sauté onion until soft
- Add spice blend, stir and sauté for 1-2 min
- Add tomato paste
- Add ground meat, cook until no pink remains
- Remove the pan from the heat and stir in 1/2 of the cheese
- Slice zucchini lengthwise and scoop out the center to create a shell and place into a greased baking dish.
- Fill each zucchini with 1/4 of the beef mixture and top with remaining cheese
- Cover baking dish with aluminum foil
- Bake for 25 minutes or until zucchini is soft and cheese is bubbly
- Serves 2-3
