Crispy Smashed Potatoes

Ingredients

  • 1-2 pounds baby potatoes
  • olive oil
  • Lowry's Seasoning or kosher salt

Directions

  1. Place baby potatoes in a pot of water, bring to a boil and cook for 20 minutes or until fork tender.
  2. Drain the potatoes and let cool. (Potatoes can be refrigerated overnight at this point).
  3. Place the potatoes on a cutting board or work surface and using the bottom of a cup, press down firmly to smash the potato making sure it doesn’t come apart.
  4. Heat a large sauce pan over medium high heat and cover the bottom of the pan with a thin layer of oil. 
  5. Place the potatoes in the saute pan, sprinkle with salt and allow to cook for 5-6 minutes on each side (add more oil to the pan as you go) or until crispy and golden.

Notes
- Cooking method can easily be swapped to steam potatoes in the microwave, smash them, lightly cover in oil and seasoning/salt and then roast in the oven.
- Dipping sauce: 2 Tbsp Dijon + 3 Tbsp Maple Syrup + Dash of salt

Cheesy Meatball Sliders

Ingredients
  • 12 Italian meatballs (or 2-3 meatballs per person)
  • 1 (24 ounce) jar marinara sauce (divided)
  • 12 Hawaiian rolls
  • 1 cup shredded Mozzarella cheese
  • 1/2 cup shredded Parmesan cheese
  • 3 Tablespoons butter (melted)
  • 1/2 teaspoon garlic salt
  • 1/2 teaspoon Italian seasoning
  • 1/4 cup grated Parmesan cheese
Directions
  1. Heat oven to 375.
  2. Place frozen meatballs in a skillet with 1 1/2 cups marinara sauce. Cook on medium high heat until the meatballs are heated through and covered in sauce.
  3. While the meatballs are simmering, cut the rolls in half leaving them attached.
  4. Place the bottom section of the rolls in a lightly greased 9 x 13 inch pan.
  5. Place a cooked meatball that is covered in marinara sauce on each roll.
  6. Sprinkle Mozzarella cheese and Parmesan cheese over all of the meatballs.
  7. Place the top part of the rolls on top (they should still be attached to each other).
  8. Combine melted butter, shredded Parmesan, minced garlic (or garlic salt) and Italian seasoning together in a small bowl.
  9. Baste the top of the rolls with the buttery mixture then sprinkle with grated Parmesan cheese.
  10. Cover the pan loosely with foil and bake for 8 minutes then remove foil and bake an additional 4 minutes.

Cheesy Potato Casserole

Ingredients
  • 1 pint (2 cups) sour cream
  • 1 can (10 3/4 oz) condensed cream of chicken soup
  • 1/2 cup butter, melted
  • 1 tablespoon garlic salt
  • 1 cup chopped onions
  • 1 bag (30 oz) frozen country-style shredded hash brown potatoes, partially thawed
  • 2 cups shredded Cheddar cheese (8 oz)
Directions
  1. Heat oven to 350°F.
  2. In large bowl, combine sour cream, condensed cream of chicken soup, melted butter, garlic salt, onions, frozen shredded hash brown potatoes, and shredded Cheddar cheese.
  3. Stir until well blended.
  4. Pour into ungreased 13x9-inch (3-quart) glass baking dish.
  5. Bake 45 minutes.
Notes
- Sprinkle the top with chopped green onion or a handful of finely chopped parsley or other fresh herbs before serving.

- For a twist, try 1 bag (32 oz) frozen southern-style diced hash brown potatoes instead of country-style shredded hash brown potatoes. Their chunkier texture holds up well whether baked or slow cooked, and they’re a good partner as a side dish to roasted meats.
