Healthier Ramen Noodle Soup

Ingredients
  • 1 32 Oz Box of Chicken Stock, low sodium
  • 1 Cup water
  • 2 Tbsp White or Yellow Miso
  • 2 (3-ounce) packages ramen noodles
  • 4 Shiitake Mushrooms, sliced thin // 1 can of mushrooms
  • 2 Tbsp soy sauce
  • 2 Tbsp Mirin
  • 1/2 Tsp garlic powder
  • 1/4 Tsp onion powder
  • 1/4 Cup Scallions, green & white, sliced
Directions
  1. In a large saucepan add the chicken stock, water, miso and bring to a boil.
  2. Add the remaining ingredients* and cook for 3 minutes or until the ramen noodles are soft.
  3. Add the scallions and serve.

Notes
Optional additional Ingredients: fresh spinach, nori, wakame, hijiki, arame, chicken, shrimp, cubed tofu

Toasted Couscous with Spices and Chicken

Ingredients
  • 1 cup israeli couscous
  • 1 tablespoon Olive Oil
  • 1 small Onion, diced
  • 1 garlic clove, minced
  • 2 boneless, skinless chicken breasts, cut into 1-inch cubes
  • 2 carrots, peeled and cut into 1/2 inch coins
  • 1/4 cup diced dried apricots
  • 2 cups low sodium chicken stock
  • 1 teaspoon Kosher Salt
  • 1/4 teaspoon ground cumin
  • 1/2 teaspoon ground cinnamon
Preparation
  1. In a 2-inch deep sauté pan over medium heat, dry toast the couscous for 3 minutes, until golden brown. Remove to a plate.
  2. Heat the oil in the pan. Add the onions and garlic, and sauté for 5 minutes, until soft.
  3. Add the couscous back to the pan, along with all the remaining ingredients and stir to combine well.
  4. Bring the mixture to a boil, reduce heat, cover, and simmer for 10-12 minutes, until the chicken is cooked through.
