Bisquick Quick Quiche

 Ingredients

  • 4 Eggs
  • 2 Cups milk
  • 1 Cup Bisquick
  • 1 Sweet onion diced then sautéed
  • Meat of choice (ham, cooked breakfast sausage, lunch meat, leftover chicken, you name it)
  • 1 Cup cheese shredded (about 4 ounces)
  • 1/2 teaspoon salt
  • 1/8 teaspoon ground black pepper

Directions

  1. Preheat oven to 400 °F
  2. Lightly grease a baking dish (10-inch pie pan or similar)
  3. Sprinkle 1 cup (4 oz) cheese and other fillings into pan evenly
  4. In a bowl beat eggs + salt + pepper
  5. Add in milk
  6. Mix the Bisquick into egg mixture 1/4 cup at a time until TOTALLY smooth
  7. Pour the liquid egg mixture over the ingredients in the pie plate.
  8. Bake for 35-40 minutes
  9. Let cool 15 minutes before cutting
  10. Slice and serve!

Notes

  • You can add in whatever you like to this Bisquick recipe. The original one calls for ham or bacon and Swiss cheese.
  • Make this an easy vegetarian recipe as well, just use your favorite vegetables in this dish instead of the bacon or ham.
  • Make sure that you let it cool down. The quiche will fall apart if you serve it too soon. Let it cool and rest out of the oven for a while.
  • You can double this recipe and bake it in a 9×13 pan, which is something my mom would do for large crowds. Quiche squares are just as delicious as the pie shape!

Sausage Pasta

Ingredients
  • 1 package pasta (rigatoni / rotini / ziti / penne -- Whatever you fancy!)
  • Olive Oil
  • 1 small yellow onion, minced (use the manual food processor to make it easy)
  • 1 package regular (not spicy) Neese's Country Sausage
  • 6 oz. tomato paste
  • 2 - 3 cloves garlic, minced
  • 1 cup beef stock
  • 1 cup Light Cream (Heavy cream is also acceptable and delicious)
  • Salt & Pepper to taste

Directions

  1. Cook pasta, drain, then add drizzle of olive oil, set aside
  2. Heat oil in pan. Add chopped onion. Cook over low heat until onion is soft
  3. Add sausage meat and fry until done. Drain fat (optional)
  4. Add garlic, tomato paste, and 1 cup of beef stock. salt and pepper
  5. Simmer over low heat for 10-ish minutes
  6. Add cream & stir
  7. Combine pasta with sauce
  8. Top with freshly grated parmesan cheese (optional but strongly encouraged)

Notes

  • Jimmy Dean Regular sausage can be used
  • 1/2 is fine!
  • Alt to beef stock: ‘Better Than Bouillon’ paste and 1 cup water

Peach BBQ Sauce

Ingredients

  • 1 can (or 2 cups peaches, peeled and sliced)
  • 1/2 cup brown sugar 
  • 1/3 cup ketchup 
  • 1/3 cup apple cider vinegar 
  • 2 tablespoons soy sauce 
  • 2 teaspoons garlic, minced OR frozen garlic cubes
  • 2 teaspoons ginger, minced OR frozen ginger cubes

Directions

  1. Combine the peaches, brown sugar, ketchup, vinegar, soy sauce, garlic and ginger in a food processor or blender. 
  2. Transfer ½ cup sauce to a small bowl for basting.

Roasted Chicken with Onions and Sweet Potatoes

Ingredients

  • Chicken tenders, raw
  • 2-3 sweet potatoes, peeled and large diced
  • 1 medium sweet onion
  • Optional: broccoli florets

Directions

  1. Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
  2. Add veggies to the bottom of the baking dish, toss with olive oil and season
  3. Top with chicken, drizzle with olive oil and season
  4. Bake 30 to 40 minutes or until potatoes are tender and juice of chicken is clear when thickest part is cut (at least 165°F).

Watermelon Feta Salad

Ingredients

  • fresh watermelon, diced small
  • goat's-milk or sheep’s-milk feta block, crumbled
  • avocado, diced small
  • cucumber, diced small

Directions

  1. Combine all
  2. Chill
  3. Serve

Notes
What you really want to look for is goat's-milk or sheep’s-milk feta, whether domestic or imported from Greece or Bulgaria, which should have a much creamier texture and a flavor that balances saltiness with the characteristic funk of sheep’s milk.
