Ingredients
- Chicken tenders, raw
- 2-3 sweet potatoes, peeled and large diced
- 1 medium sweet onion
- Optional: broccoli florets
Directions
- Heat oven to 400°F. Spray 13x9-inch (3-quart) baking dish with cooking spray.
- Add veggies to the bottom of the baking dish, toss with olive oil and season
- Top with chicken, drizzle with olive oil and season
- Bake 30 to 40 minutes or until potatoes are tender and juice of chicken is clear when thickest part is cut (at least 165°F).
