Ingredients
- 1 lb ground pork OR shrimp
- 1 bag coleslaw mix
- 3 cloves garlic, minced
- 2 tbsp soy sauce, plus more to taste
- 1 tsp ground ginger
- 2 cups cooked rice
- Sliced green onions, optional
- Sesame seeds, optional
Directions
- Cook the rice: Prepare the rice according to the package directions.
- Cook the protein: If using pork, Add the ground pork to a large skillet over medium-high heat. Cook, breaking it up as it browns, until fully cooked, about 6–8 minutes.
- Add garlic and ginger: Stir in the garlic and ground ginger. Cook for about 30 seconds, until fragrant.
- Add the coleslaw mix: Stir in the full bag of coleslaw mix.
- Cook until tender: Cook for 5–7 minutes, stirring occasionally, until the cabbage softens but still has a little texture.
- Season: Stir in the soy sauce. Taste and add a little more soy sauce if needed.
- Serve: Spoon the egg roll mixture over cooked rice and top with green onions and sesame seeds, if using.
