- 2 lbs carrots
- 2 eggs
- 1 stick butter
- 1 tsp salt
- ½ cup sugar
- 2/3 cup flour
- 1 tsp baking powder
- 1 tsp vanilla
- ½ tsp cinnamon
- Peel carrots and cut in large pieces.
- Cover with water and boil until soft.
- Drain.
- Put in food processor or large bowl and mash with margarine.
- Add the other ingredients and mix well.
- Pour into a greased casserole dish.
- Bake for 1 hour at 350º.
Add ½ cup raisins, if desired.
