Ingredients

• fresh watermelon, diced small
• goat's-milk or sheep’s-milk feta block, crumbled
• avocado, diced small
• cucumber, diced small

Coronation Chicken

Ingredients

• 1/4 cup mayo (Duke's... obviously)
• 1 tsp (heaping) apricot jam (sub: mango chutney)
• 1/4 tsp curry powder
• juice of 1/2 lemon
• 1 shallot, finely chopped (optional)
• 1/2 cup celery, finely chopped (about 2 stalks) (optional)
• 1 palmful golden raisins (sultanas)
• 1/2 cup cooked chicken, cubed (rotisserie chicken is best here)
• salt & pepper to taste

Directions

1. In a large bowl mix together mayo, apricot jam, curry powder, salt, pepper, and lemon juice -- whisk to combine
2. Add in finely chopped celery, shallot, golden raisins
3. Fold in the cooked chicken
4. Enjoy!

Notes
- Serve in a toasted pita pocked with shredded lettuce

Ingredients

• egg or eggs
• 2 Tbsp vinegar (apple cider, rice wine, or white wine vinegar are all fine)
• water

Directions

1. crack egg into a find mesh strainer and then into a small bowl
2. bring a pot of water to low simmer
3. add vinegar 
4. swirl the water then drop the egg (if cooking more than one, drop >> swirl >> drop)
5. cooke for 5 1/2 - 6 min
6. remove from water onto a dish towel
7. season & enjoy!

Ingredients

• 1 stick butter, softened
• 4 oz cream cheese
• 1/4 cup canola oil
• 1/2 cup sugar
• 1 cup sour cream
• 1 box Duncan Hines Butter Golden Cake Mix
• 5 eggs
• 1 teaspoon vanilla extract

Directions

1. Preheat oven to 350°
2. Cream together butter, cream cheese, canola oil, and sugar together until fluffy
3. Add sour cream, beat well
4. Add cake mix, beat well
5. Add one egg at a time, beat well after each egg
6. Add vanilla extract, beat well
7. Pour batter into prepared bundt pan
8. Bake at 350° for 35-45 minutes
