Ingredients
- 1 - 2 heads cauliflower chopped into florets (Make sure cauliflower florets are similar sizes for consistency in doneness.)
- 3 tablespoons olive oil
- 1 teaspoon garlic salt
- 1/2 cup shredded Parmesan cheese
- 1 teaspoon grated lemon peel
- Chopped fresh Italian (flat leaf) parsley, if desired
Directions
- Heat oven to 400°F.
- Spray 15x10x1-inch pan with cooking spray.
- In large bowl, mix cauliflower, olive oil, salt and then toss to combine.
- Spread on pan.
- Roast 20 to 25 minutes, stirring occasionally, until cauliflower is tender and golden brown.
- Remove from oven; toss with Parmesan cheese and lemon peel.
- Optional - Garnish with chopped parsley.
